The flavor profile exceeds what you would get from the extract. I became a convert a few years ago after discovering it in Williams-Sonoma. Glad to see that Amazon is carrying it, although I buy much larger quantities elsewhere., I love using Vanilla Bean paste in everything from homemade ice cream, to my vanilla bean custard--think Creme Brulee.
